Grocery shopping is a mini getaway for most moms, including myself. I enjoy walking through aisles and checking out new food products for my kids to try. Pero mas okay kapag maraming deals and promos. Enjoy ka na sa shopping, naka-save pa! 🙂

So last March 10 I attended the Shopwise Home Wise Moms in Shopwise Cubao. It is an event prepared especially for moms by Shopwise and Mommy Mundo.

The event started with a cooking demo by Chef Golda Liamzon and all guests were able to sample her creations. I might try the Tres Leches Cake kaso matrabaho nga lang. 🙂 If you want her recipes — Fresh Fruit Tres Leches Cake, Pizza Lasagna Rolls, and Margherita Lasagna Rolls — scroll down.

Games, raffle prizes, and giveaways made the “party” extra special. In fact I was asked to join in one of the games kaso hindi nga lang ako nanalo haha. Shopwise and Mommy Mundo were so generous to surprise all the mommies with gift packs.

To wrap up the event, mommy blogger Rochelle Rivera shared her thoughts about empowering women, especially moms, whether it be outside or inside their homes. I also learned a couple of her personal home cleaning hacks.

Pizza Lasagna Rolls

Ingredients
  1. 6 pcs cooked lasagna sheets
  2. 750 ml spaghetti sauce
  3. 250 g mozzarella, grated
  4. 250 g pepperoni, sliced
  5. 750 ml bechamel sauce
Instructions
  1. Spread the lasagna sheets on a baking tray
  2. Layer with the spaghetti sauce, pepperoni, and mozzarella
  3. Roll the lasagna sheets
  4. Top with spaghetti sauce and bechamel sauce
  5. Bake for 10 minutes at 300F

  4. 100 g fresh basil leaves
  5. 250 g mozarella, sliced
  6. 750 ml bechamel sauce
Instructions
  1. Spread the lasagna sheets on a baking tray
  2. Layer with the spaghetti sauce, tomatoes, mozarella slices, and basil leaves
  3. Roll the lasagna sheets
  4. Top with spaghetti sauce and bechamel sauce
  5. Bake for 10 minutes at 300F

Fresh Fruit Tres Leches Cake

Ingredients
  1. 1 cup all-purpose flour
  2. 1 and 1/2 tsp baking powder 1/4 tsp salt
  3. 5 whole eggs
  4. 1 cup sugar, divided into 3/4 and 1/4 cups
  5. 1 tsp vanilla extract
  6. 1/3 cup whole milk
Syrup
  1. 3/4 of a 12 oz can evaporated milk (8oz/255gr)
  2. 2/3 of a 14 oz can sweetened condensed milk
  3. 1 cup 1/3 cup heavy cream
Frosting
  1. 1 pint (2 cups) heavy whipping cream
  2. 2 tbsp granulated sugar
Instructions
  1. Preheat oven to 350F and spray pan with vegetable oil
  2. In a large bowl, sift together flour, baking powder and salt.
  3. In another bowl, separate the egg white and egg yolks into two bowls. Using an electric hand mixer, beat eggyolks with 3/4 cup sugar on high speed, until yolks are pale yellow. Stir in milk and vanilla.
  4. Beat egg whites on high speed until soft peaks form. Pour in 1/4 cup sugar and beat on high speed until egg whites are stiff but not dry.
  5. Pour egg yolk mixture over the flour mixture and combine with mixer on low speed. Gently fold in egg white mixture until just combined.
  6. Pour batter into prepared pan and spread out. Bake 20 minutes or until toothpick comes out clean.
  7. Transfer cake onto a rimmed platter and allow to cool to room temp.
  8. Combine the evaporated milk, condensed milk, and heavy cream and mix well.
  9. Punch holes using a fork on the cake. Pour in the milk mixture and place in the refrigerator. Soak for 6 hours or overnight.
  10. For the whipped cream, beat the whipping cream with a 2 tbsp granulated sugar until firm.
  11. Top the cake with the whipped cream. Put back in the ref. Serve chilled.
