How to Prevent Spoilage and Loss During Peak Harvest Season

The majority of harvest-season damage doesn’t occur in storage. It occurs in the time and space between the field and the receiving dock – a gap of often hours that makes the final decision as to whether a load arrives as a product to sell or as refuse to dump. Keep that gap small, and you save more yield. Allow it to widen, and all the cooling power downstream will be wasted.

Pre-book capacity before harvest begins

Refrigerated transportation capacity does not increase because you’ve reached the peak maturity date for your region. But the number of growers trying to secure trucks obviously does. If your crop and your neighbor’s crop are ready at the exact same time, both operations are going to be competing for the same available trucks.

Large carriers can secure hundreds of trucks for you, but only if you confirm early enough. If you wait until the optimal harvest window to contact your carrier and try to secure trucks, the response you’re going to get most often will be: “Sure, We’ll see what we can do for you.” That means: no guarantee. Waiting allows other accounts to claim that capacity. It also raises the probability of securing available trucks capable of hauling your reefer, but with a pickup date two days after your crop ideally should have left the loading pad.

The solution: Finish coordination and communications with your truck carrier(s) prior to the first day of your harvest window. Know when they’ll start picking your crop up. Know how many trucks and drivers you need. Know how your goods will be tracked and monitored on the road to ensure that temperature is maintained. Know who to contact immediately if you think the truck is delayed, lost, or involved in an accident. And warning your carrier of your plans to arrive when you might be asked to load, not confirming those plans, can be an invitation to be left waiting for a truck to arrive.

 

Remove field heat within hours of picking

The most time-critical phase out of the whole chain. Freshly picked product has “field heat” and that heat promotes respiration, desiccation, and microbial growth. Every hour between the field and a cooler sacrifices shelf life that cannot be regained downstream.

Forced-air cooling and hydro-cooling are the two most common methods of field heat removal. The choice of method often depends on the product type – leafy greens are candidates for hydrocooling, while delicate berries are often forced-air cooled. The objective, regardless of method or product, is to cool the commodity to its optimal storage temperature as quickly as possible, often within just a few hours.

Do not expect a reefer trailer to “make up” for warm product. Trailers are designed to maintain temperatures, not to pull product down from elevated temperatures. If you arrive at the dock with warm product, expecting the refrigeration unit to cool it during transit reveals a fundamental misunderstanding of refrigeration physics.

 

Work with a carrier that already understands harvest season

Not every carrier works with agricultural freight in the same manner. Loading produce requires specific food safety paperwork, as well as commodity-level handling expertise. Plus, there’s the insight that the carrier capacity you rely on needs to expand by 20% for two weeks straight, every 60 days.

A carrier learning these dynamics on your load during peak season is a risk you don’t need to take.

Match the trailer environment to the crop, not a generic setting

Not all commodities are the same, and yet many loads are treated as if they were. Stone fruits, citrus, leafy greens, root vegetables, and alliums are the ‘divas’ of the reefer world because they’re so easy to get wrong if you don’t pay attention to the details. And temperature is only part of it.

Each product has a recommended setpoint, relative humidity, and airflow. Leafy greens like it wet (-95% RH), leafy vegetables like it dry (-85% RH), and most fruits are in the middle (-90% RH). Too much humidity and product quality is sure to suffer. Yet, we estimate that as much as 85% of refrigerated transport operates above the 95% RH setpoint of most fruits and vegetables.

 

Use IoT monitoring so problems surface in transit, not at delivery

Temperature changes can occur during transit. Whether it’s because trailer doors are open and closed, reefer units power on and off, or equipment glitches. The issue is, do you get this information while the load is in transit or when you receive a complaint from the buyer?

Telematics systems integrated with your reefer unit and IoT sensors provide real-time insights into trailer conditions. Knowing that the temperature is out of your required range while the load is still on the road puts you in a position to find an alternative solution – sending the trailer to a new receiver, adjusting the temperature set points, or filing a claim. When the load has not yet been delivered, it’s not too late. If that information only becomes available at delivery time, well, it might need to be used in a dispute.

 

Minimize loading dwell time

For every minute that the trailer door is open, cold air is lost and ambient heat is gained. Pre-staging pallets, pre-cooling product to the desired temperature before it’s loaded, and sticking to a strict dock schedule will all minimize this exposure. It may sound mundane, but dwell time at packing houses and farm docks in peak harvest is often longer than it needs to be because the demand pressures are simply overwhelming.

A load that is staged and cooled and ready to go when the truck arrives loads faster, gets sealed sooner, and gets down the road in better condition.
